A simple light summer dessert and a special day dedicated to it. Yup, it’s National Cherry Tart Day! If you haven’t yet celebrated this day, don’t miss it this year! Bakers make the most of the occasion and prepare a large assortment of delicious tarts for the special day, so make your way into any bakery and you won’t be disappointed. Or you can make your own like I do. Here is the recipe for a delicious Mini Cherry Cheesecake Tart my family uses:
Ingredients:
8 oz cream cheese at room temperature
1/2 cup sugar
1 egg
1 tsp vanilla extract
whole vanilla wafers
1 21 oz can of cherry pie filling
Directions:
In a medium bowl thoroughly mix the cream cheese and sugar with a fork. In a measuring cup, mix together the egg and vanilla extract, then combine with the cream cheese mixture. Mix with electric mixer till fluffy.
Place vanilla wafers in the bottom of mini paper muffin cups and place on a cookie sheet. Top each with about a tablespoon of the cream cheese filling making sure the cookie is covered. Bake at 350 degrees for 20 minutes.
Remove the tarts from the oven and allow the cream cheese filling to deflate and settle into the muffin cups. After they have cooled, top with the pie filing.
Once you’ve topped all your tarts store them in airtight container and refrigerate until it’s time to serve. Since one batch fills two of these Ultra•Seal containers, it’s a great choice for storing and transporting your tarts. That way you can easily transport your tarts to work and celebrate National Cherry Tart Day with your coworkers!
